What a delicious bottle of bubbly this is. The nose is apple and lemon with a touch of yeasty-breadyness (but just a touch), that fruit is right in your face and very welcome. 13th Street 2004 Premier Cuvee Brut

One of Ontario’s best bubbly producers is at it again, this time producing a bottle of bubbly that’s very French in style but all Ontario in flavour. Made from 66% Pinot Noir and 34% Chardonnay aged 36 months (3 years) in bottle on the lees, then disgorged, dosaged and aged another 12 months (1 year) for added complexity. Jackson-Triggs 2003 Proprietors' GR Brut

Sparkling wine making is growing in popularity here in Ontario, but most don't have a vintage date, nor are they 5 years old when you can purchase them. This sparkler, J-T's Methode Classique - which means 36 months on lees in bottle - has a beautiful bouquet (seemed only appropriate to use this term) of toasted apple, vanilla and honey notes ... on the palate much of the same with a hint of yeastiness and buttered toast.
