DescriptionDescription  Cave Spring makes one of my favourite Rieslings of 2007, the Dolomite, which, if you don’t know, is loaded with great minerality and a touch of sweetness, but when mixed together it has an amazing dry effect. So I’m not surprised by what winemaker Angelo Pavan did with this Sauvignon Blanc. The nose shows little to no fruit; instead it’s intense with minerals and wet-stoniness. Put it in the mouth and it seems soft and a little green … where’s the minerality, where’s the sweet. Give it some time and green turns into an orange-tang – then it hits you. There’s oak in here, buttery-vanilla oakiness (from the 25% new French oak) that gives the finish a residue of caramel. Intense and interesting, not at all what you expect from Sauvignon Blanc … but still very good. Price: $19.95
