Description
Cabernet Sauvignon is a tough slog here in Ontario. It doesn’t always ripen fully and as a single varietal seems to have a green herbaceous note that some find very off-putting. In 2007, that note on the Cabernet Sauvignon disappeared. The 13 weeks of dry, drought-like conditions caused the vines to struggle, as good grape vines should, and many came out better than winemakers could have hoped for, with bigger brix levels (sugar) and fully ripe concentrated berries (almost universally unheard of here in Ontario). This Cabernet Sauvignon screams juicy right from the get-go, with blackberry, pepper, cinnamon, a touch smoky and a little bit of violet teasing the nose. Once inside the mouth this wine shines, proving that the nose did not lie about its juiciness of fruit or the cinnamon. There are other notes of interest too, including a nice hint of chocolate, which goes well with those smooth tannins and great mouth-feel that’ll keep you coming back to the glass for more and back to this bottle for years to come.
