Description
This wine is exactly what it sounds like, it’s made from Macintosh apples and wildflower honey (roughly a 60-40 blend) and can take upwards of 3 years to make, according to owner and winemaker Matt Passafiume. “It’s the honey that can take up to 2+ years to go through primary fermentation,” he confided, “it’s a waiting game, you just have to be patient.” With results like this its no wonder he’s willing to wait. This slightly carbonated, slightly sweet (3) concoction is a beautiful hot day sipper. With aromas of apples and sweet honey on the nose, which translate onto the palate without being sickeningly sweet. Flavours are rich with apple and just a kiss of floral derived from the honey. This wine dances lightly across the tongue for pure refreshment and a bit of fizz. So delicious and so tempting, you could easily finish the whole bottle yourself, but it’s also great for sharing on a hot summer afternoon. Winner two years in a row (2008, 2009) of a Double Gold for best fruit wine at the All Canadian Wine Championships – and at a steal of a price. Price: $12.95 – Rating: *****
