Cave Spring 2005 Brut
This Chardonnay/Pinot Noir blend is made in the traditional method and spends 24 months on its lees in bottle. That kind of care shows through in both taste and quality, which seems to go hand-in-hand with this bubbly. Bready, yeasty smells mix with apple and citrus. This one is made in the "method classique"- which means aged on lees in the bottle, like they do in Champagne, but not the usual three years, as you would find in Champagne.
