	Peller Estates NV Ice Cuvee Rosé Back in December, I made mention of the rise of sparkling wine making in Ontario (Newsletter #72) … well not to be outdone, Peller has re-invented their flagship sparkler. For years, they have made the unique sparkling Ice Cuvee – a bubbly that replaces the still wine dosage with ice wine. But over the past few years, the wine has been losing its luster – someone told me it was because Peller reduced the amount of icewine they used in the dosage. 	Chateau des Charmes Methode Traditionelle Brut Coming to Vintages again, but always available at the winery, this sparkler really is quite a treat. The taste is biting and bracing with its fizzy citrus qualities and tastes - a hint of carmelized lemon rind appears in the mouth but the finish is crisp, lemon clean. They say that sparkling wine goes with anything and everything because it helps clear the palate, washing everything away and readying the mouth for the next bite – this one’ll do the trick nicely and without interference. 	Palatine Hills Estate Winery 2004 Blanc de Blancs 100% of these Chardonnay grapes come from their very own vineyard, a full three years in bottle on the lees (in the traditional “Champagne” method) labour intensive daily turning and finally released in November 2007 – just in time for both the festive season and Taste the Season. It has all the prerequisites of a good, quality sparkler: toasty apple and lemon, bready yeastiness on the nose, pleasant, lively and persistent bubbles and a refreshing taste. 	Magnotta Limited Edition Sparkling Vidal Icewine There are only a handful of these out there (sparkling icewines), in fact, I can only think of one other producer off the top of my head, but Magnotta was the first to try the combination of putting bubbles into an icewine (and not vice versa). This sparkling Vidal is an interesting mix of sweet, refreshing and light. Icewine, by its very nature is sweet and this one is no different with apricots, apples and honey (both on the nose and taste) – some find icewine to be thick and heavy with all ...
