Fruit wine is so much fun, because it delivers on its name – Cabernet Franc, Cabernet Sauvignon, Sauvignon Blanc, Chardonnay really don’t describe a flavour or smell – they have profiles but then can be manipulated … now when I say strawberry, that conjures up smells and flavours that we can all recognize. No word on how long the oaking takes place but it sure does add something to the finished product. As you would expect from an apple wine, the nose smells like apples, but there's more, including a touch of cinnamon and vanilla. Fans of the Harvest Gold, or even non-mead drinkers, might want to check out this little beauty … same sugar code level as the Gold (2), but this one adds a beautiful layer of fruitiness to both the nose and palate. Niagara’s first meadery, and if you’ve never tried mead, I suggest you do so, and now is the perfect opportunity – it truly is a different taste experience. The nose gives off aromas of floral and bubblegum … in the mouth, the bubblegum turns tropical in nature before ending with a much drier finish then what your senses initially got.
