Look out Icewine there's a new game in town for sweet wine fans. Well "new" isn't exactly the right word, "old school" might be a better description. "Profondo" is a Pinot Grigio made in the reciotto method, an Italian style that dates back centuries and is made using 100% dried grapes. But this isn't your run of the mill sweet wine. The nose is full of apricots, pears and lemons, while the palate has sweet apple, apricot and lovely spice notes, there's even a hint of pear up front that helps deliver the spicy side-of-tongue bite.
