This Chardonnay is a single vineyard (Oliveira Vineyard), wild ferment offering that was started with great success a few years ago. Wild ferment means a few things, most notable of which are: 1) the juice was not inoculated with cultured yeast, the naturally occurring yeasts from the vineyard were used to spontaneously start the fermentation process; and 2) because of the number one reason, you can get some interesting flavour from a wild ferment wine. This version of the Oliveira wild ferment was a firm and fleshy number, with creamy caramel, butter and vanilla through the nose and a delicious caramel apple on the mid-palate right to the finish.
