Here’s an interesting little sparkling test winemaker Craig MacDonald tried at Hillebrand … a 5 year on lees, in bottle, no dosage, brut nature sparkler – to show how a bubbly can age gracefully. Using 70% Pinot Noir and 30% Pinot Meunier the wine has a slight bronze-ish colour, with a nose of almond, marzipan and bread crust, while the palate adds a slight mushroomy note to the above … But here it’s the long finish that really makes this wine sparkle.
