This Malbec took 12-plus months to ferment out in the Raw method Andrzej Lipinski has designed – all in concrete, wild yeast, etc. etc. etc. – granted this Malbec gets dried (aka: appassimento method) so alcohol gets raised and flavours are intensified but there’s a wow factor to this wine which includes pepper, smoke, black cherry and bittersweet chocolate; and the finish it delivers the unexpected leather and baking spice for added complexity.
