Tawse is starting to develop themselves quite an array of Sparkling wines, all under the name ‘Spark’ … they’re doing Chardonnay, a blend of white grapes and in the past a Rosé has been on the shelves; but I think my favourite to date is this awe-inspiring, mouth-puckering Riesling done in the traditional method with 8 months on lees. That short time has kept the Riesling aromas of apple, pear, lime and added touches of yeasty-goodness. The palate is nothing short of brilliant, especially if you’re a fan of acidity: big citrus, green apple, tart lemon – mouth-puckering, mouth-cleansing and mouth pleasing. A truly delightful sparkling Riesling that doesn’t dumb itself down, in fact, it raises the bar on sparkling Riesling. Price: $19.95 – Rating: **** ½+
