I love a good bubbly with some age on it ... and this bubble is 5 years from vintage date, which means not only did it have time in bottle as it sat in the winery cellar, but also after riddling (removal of the lees) it has had time to develop further. A lovely citrus and sweet apple aroma with some yeasty notes ... the palate is pleasantly dry with a hint of bitterness (that would be the acidity working) and a nice bread crust finish. It shows lovely complexity, and should develop further in the bottle so don't drink it up to quickly. Price: $24.95 - Rating: ****
