Bubbly is becoming big all over Ontario - at a recent tasting during the judging of the Ontario Wine Awards we ploughed through 24 bubblies and I'm sure that's only half of the sparklers being made in the province. The nose on this Flat Rock vintage brut is baked apple pie and mulled cider laced; taste becomes Jolly Rancher green apple with mineral goodness, nice acidity and an apple pie finish with a really pleasant linger.
