Tasting in 2017 … Rosé bubbles are having a moment, sales for this category have doubled in the past then years – and there’s no sign it’s abating.  Sadly Rosé makes up only 7-8% of Bollie’s production … 62% Pinot Noir, 24% Chardonnay and 14 % Pinot Meunier make up the blend with the addition of 5-6% red wine then aged 3-4 years in bottle.  This is such a pretty bubble with it’s berry bowl of fruit: raspberry, cherry, strawberry and slight oxidative note; there’s even some cranberry and hints of tannin dancing around the periphery, all finishing long a la mixed red berry tart.  Price: $103.95 – Rating: ****+
