When I heard 70% new oak I was tempted to assume over-oaked wine, but then I learned it was in 500L barrels (larger than usual) so that made it a different story. Barrel fermented and aged for 12 months with some whole bunch pressing has added even more complexity into this already layered wine. Rich and buttery with vanilla, baked apple, peach pie and simple spices that does not overwhelm the fruit … robust version of Ontario Chardonnay that’s mouth-filling and supple with acidity to match.
