“Wow” … next sip … “Wow” … next sip … “Wow” … this is truly the best bubble made at Featherstone to date. It’s 100% Chardonnay from the 2013 vintage spending 31 months on lees – and while the acidity is bracing once you get past that everything starts coming together: brioche and toasty notes with some lemon and apple fruit mid-palate along with green apple on the finish, great minerality and acidity to make the finish clean and refreshing but still with a long and elegant length on that finish. Plus I love that acid backbone, which makes this wine food ready for anything, and I do mean try pairing this with ANYTHING.
