The fruit is treated exactly the same as the Savvy Sauvignon Blanc – with 6 hours skin contact and 4 months on lees – but it also spends 5 months in barrel with a very low toast and that gives this wine some added complexity – the tropical notes are toned down, there’s a hit of vanilla, some grapefruit puree and even a spicy element finds its way into the mix, plus it’s got a lengthy finish that keeps those flavours repeating long after you swallow, while the acidity seems to clean everything up. Good job by winemaker Sebastien Jacquay for really squeezing the most out of this style.
