This crisp, 28 month on lees, 100% Pinot Noir has a dosage of Chardonnay, to give it extra crispness and fruit character: lemon, lime and green apple bring a freshness level to this traditional bubble that I’m a big fan of, and there’s even some floral amongst the yeasty and baked bread notes.  Price: $50.00 – Rating: ****
