This Savvy B has been through quite a bit … it starts by being a 3 farm blend of grapes, all from the Niagara on the Lake sub-appellation; all three have extended hang time to help ripen that fruit completely – it’s then 80% barrel fermented (5-7% new oak) and 20-30% of the juice is wild fermented … thus adding yet another potential layer – and then it all comes down to barrel selection. The result is a Sauv Blanc with style, finesse and even some elegance: coconut, melon, good acid bite and a slight bitterness on the finish where hints of vanilla and melon rind hang out.
