(2019 Tasting) … This 100% Chardonnay bubbly is all sourced from a single vineyard, fondly remembered as the Oliviera Vineyard, but now called the Watching Tree Vineyard … this single parcel sparkler’s base was taken when it was the former name from the 2011, 12 and 13 vintages then spent four years on lees before release and is made in a “super dry” style with near one gram residual sugar – slightly smoky, gentle oaky nuances but also with those typical bready, biscuit, yeasty notes one expects from traditional bubbles; the acidity is searing yet sexy (for those that dig on high acid in their bubbles) and a crispness that elevates the pear, apple, almond and lemon notes that create the mid-palate.  Price: $55.00 - Rating: ****
