Upon opening ... Apalta Cork

Looks incredibly dark; cork is in perfect shape, no wine creeping up.

Dark, smoky and cedary - it's consistent sniff after sniff.

Fruit is still there, it's dark and brooding; there are some notes of coffee and black licorice, but they are not intrusive. At the 2 hour mark, little has changed; it keeps the dark fruit core with an underlay of cedar and smoky notes - but across the palate it is silky smooth with low-grade tannin grit..

I'd like to say the wine changed through the time I had it open. I sipped on it for over 3 hours, nursing it to see if it would develop anything different; but it did not, it stayed fairly constant, each sip adding a little more or a little less cedar - but the dark fruit seam was always there.
