Taste it Again / Lost & Found
On occasion, I’ll take a wine I like and put it away in a “special box” for a few years to see how it will age … below you will read happened to those wines. On the other hand, there are wines that get “lost” in my wine cellar with nary a review ever written - some have turned into golden Treasures, others supreme Trash and then there are those that fall somewhere in-between (Tolerable). We’ll look at those here too. (New wines are being added all the time so keep coming back):

(Sept. 2, 2016) ... I like coming back to these Coyote's Run wines because I was such a fan when they were young - it really was hard for me to let them go this long, but I'm glad I did: earthy, beet root, cranberry, smoky, touch of black cherry, while dried fruit takes over the longer it's open. What was also quite nice about this wine was the acidity, which was fully intact and there was a nice length to the finish.

(May 23, 2016) ... Aging well, though the nose seems to give off more aged aromas than the palate shows: earthy, leathery, dried red and black fruits take over the aromas while the palate comes across younger with elements of balsamic-strawberry, forest floor and cedar spices. I think it's time to open and drink these before they get "too old" for many.
